Vinification
This wine comes from the best fermentation of the domain, specially in syrah. We vinified different grapes and plots at controlled temperatures. Then we proceeded to the assembly in mid-2009. After a year of tanking, in August 2010, we put it in barrels. The set was matured for a year, mostly in new barrels, and finally the selection of the best barrels gave this wine.
Vintage
2011 was a scorching vintage in our region. Yields were low, but the concentration was very high. Finally, this new vintage is structured and full-bodied.
Color
Black cherry, bright, dense, revealing the concentration of this wine.
Nose
After a first woody taste which will evolve over time, we will notice a tiny dark berry woodish note at the end. The palate is round and structured. Older, this wine will develop aromas of prunes and crystallized red fruits.
Palate
The attack is clear and elegant, supported by a nice roundness due to the good ripeness and long maceration. The elegant tannins are melted in a flexible and balanced structure which make this Chevreuse 2008 a rich wine, balanced with a long finish.
Tasting
The recommended temperature is of 16 to 18 ° C. It goes well with refined traditional cuisine such as a fowl with mushrooms, a great roast lamb, duck. Grilled beef or lamb. Works also very well with foie gras, or traditional French cuisine like gratin. It can be savored alone and can compare to great names but so much less expensive.
Evolution
It's already good to drink but will be at its peak around 2014. Can be enjoyed until 2018 minimum.
